Rene Cusack Ltd is seeking an experienced Fish Filleter to join its team in Limerick. The successful candidate is responsible for the skilled preparation, cutting and filleting of fresh fish and seafood products while maintaining high standards of quality, presentation and food safety.

Main Responsibilities: Preparing and filleting a variety of fish species using appropriate knives and equipment; removing bones, skin and unwanted portions accurately; trimming and portioning fish to required specifications; inspecting products for freshness and quality; minimising waste and maintaining efficient product yields; preparing fish for display, sale and further processing; maintaining knives, tools and work areas to a high standard; and following all food safety, hygiene and workplace health and safety procedures.

Applicants should have relevant fish filleting or fish processing experience, strong knife skills, good attention to detail and the ability to work efficiently while maintaining consistent product quality.
