Job Description

Our client, an established F&B and entertainment group, is seeking an experienced Roast Chicken Chef to join its kitchen operations team.

The role is responsible for preparing roast chicken and related roasted products while maintaining consistent standards in marination, preparation, roasting, flavour, colour, texture and presentation.

Job Responsibilities

  • Prepare roast chicken and related products according to recipes and outlet standards.
  • Handle marination, skin preparation, drying and other pre-roasting processes.
  • Operate and manage roasting equipment safely and efficiently.
  • Control heat, temperature and roasting time to ensure consistent results.
  • Maintain consistent flavour, colour, texture, crispness and presentation.
  • Carry out daily preparation according to expected business volume.
  • Monitor ingredient freshness and product quality.
  • Maintain cleanliness and hygiene of the roast section.
  • Ensure proper storage and stock rotation.
  • Minimise food wastage and maintain portion control.
  • Coordinate with other kitchen sections during preparation and service.
  • Perform other duties assigned by the Head Chef or kitchen management.

Requirements

  • Relevant roast chicken, Chinese roast-meat or similar experience .
  • Strong marination and roasting techniques.
  • Good heat, temperature and cooking-time control.
  • Crispy-skin / roast-product preparation experience preferred.
  • Able to independently handle daily preparation and production.
  • Able to maintain consistent food quality and presentation.
  • Good food-safety and hygiene awareness.
  • Chinese restaurant or established F&B experience preferred.
  • Able to work independently and as part of a kitchen team.
  • Able to perform effectively in a fast-paced kitchen.
  • Able to work weekends and public holidays according to roster.
