Company Presentation: A member of Relais & Châteaux since 1992, Château de Courcelles **** opened its doors over 35 years ago. Located in the heart of the triangle formed by the cities of Soissons, Laon, and Reims, the Château is at the gateway to Champagne and only 1h30 from Paris. Its 20-room hotel attracts clients looking for an authentic 17th-century Château where they can enjoy a 25-hectare park composed of a French Garden, a forest, a tennis court, and an outdoor swimming pool heated during beautiful weather. The Château was awarded a Michelin Key in 2024, guaranteeing a unique stay experience. The gastronomic restaurant, awarded a star in March 2025, La Table de Courcelles, is managed by Chef Massimiliano Sena, who was starred for 8 years before joining the Château in June 2024. His cuisine, as elegant to the eye as it is refined for the palate, promises an experience rich in color and flavor. Constantly evolving for several years, Château de Courcelles equipped itself two years ago with a large Orangerie hosting leisure and corporate events and also has projects to open a local Brasserie, new rooms, a gym, and many more. The estate brings together 50 employees from all backgrounds forming a young, dynamic, and professional team. The activity oscillates between welcoming clients at the hotel and the restaurant, organizing professional meetings, weddings, or private receptions, or even private rentals of the estate.
We are looking for a Chef de Rang for our gastronomic restaurant, open all year round.
Reporting to the Directeur de Salle, you will ensure the management of a station from the client's arrival at their table until their departure, while ensuring their satisfaction. Possessing an innate sense of service, being smiling, and enjoying teamwork, you are passionate about the restaurant industry. This position may be for breakfast, lunch, or dinner service with a split shift, and very occasionally, a continuous day shift. Restaurant open 7 days a week. Missions:
- Management of a station,
- Participating in the preparation of the dining rooms for service,
- Checking your dining room for service and cleanliness,
- Preparation of the pantry and checking its cleanliness at the end of service,
- Service techniques such as carving fish or meat, flambéing, etc.,
- Perfect knowledge of the menu and its products,
- Presentation and service of drinks and dishes,
- Management of a commis de salle and their training,
- Ensuring the smooth running of service across all tables,
- Participating in inventory and stock management,
- Participating in order taking if needed,
- Ensuring client satisfaction throughout the service, from their welcome to their departure from the restaurant.
- Respecting hygiene and safety standards,
- Banquet service for weddings or large events.
Profile sought: Previous experience as a Chef de Rang in a gastronomic restaurant is essential.
