• Role Overview

We are looking for a motivated and adaptable Commis to join the kitchen team at Le Pirate Island Gili Lontar, a private island resort in West Lombok. You will support the kitchen team in daily food preparation and service while maintaining high standards of food quality, hygiene, and cleanliness. Working in a remote island environment, you are expected to be flexible, hands-on, and able to adapt to limited resources and changing operational conditions.

Key Responsibilities

1. Food Preparation: Assist with daily mise en place, food preparation, and cooking according to the standards and instructions provided by the Chef.
2. Kitchen Operations: Support the kitchen team during daily service and ensure smooth and timely food preparation for resort guests.
3. Food Quality & Hygiene: Maintain food quality, cleanliness, and proper food handling in accordance with HACCP and kitchen standards.
4. Stock & Storage: Assist with receiving, storing, and organizing food supplies, including proper handling of chilled and dry goods.
5. Kitchen Cleanliness: Maintain cleanliness and organization of workstations, kitchen equipment, and storage areas.
6. Teamwork: Work closely with the kitchen team and assist other sections when required, especially during busy operations.
7. Island Operations: Adapt to the unique challenges of working on a private island, including limited resources, changing supply conditions, and weather-dependent logistics.

Requirements

1. Minimum 1–2 years of experience as a Commis or in a similar kitchen position.
2. Basic knowledge of food preparation, cooking techniques, and kitchen hygiene.
3. Willingness to learn and develop culinary skills under the guidance of the Chef.
4. Adaptable, resilient, and hands-on, with the ability to work comfortably in a remote island environment.
5. Able to work effectively as part of a small kitchen team and support different sections when needed.
6. Good communication and teamwork skills.
7. Willing to live and work on a private island in West Lombok.
8. Hospitality, resort, island, or remote-area experience is an advantage.
