Restaurant Manager (M/F) - Hôtel Le Coucou
Under the responsibility of the F&B Director, our Restaurant Manager will be responsible for the smooth running of our restaurants. In daily coordination with the Chef Sommelier, the Chef de Cuisine, and the Chef Barman, he/she ensures fluid communication with all hotel department heads to guarantee service excellence, particularly during events and to meet specific client requests. He/she implements and supervises all mise en place and service processes, ensuring the application of standards and compliance with service designs.
Management:
- Establishes special menus and group menus in connection with the chef
- Leads briefings for his/her department
- Develops and grows teams by setting objectives
- Individual meetings with teams during the season
- Ensures team training
- Ambassador for the BEEFBAR franchise
- Team integration and organization
- Monitoring and ordering of equipment (crockery, glassware)
- Performs inventories during opening and closing
- Monitoring of losses and breakage
- Guarantor of team well-being and engagement
- Management and optimization of schedules in compliance with legal obligations and according to activity
Operational Follow-up:
- Ensures communication with his/her teams and transmits information from management
- Welcomes and seats clients in the restaurant, ensuring the smooth running of the entire meal
- Orchestrates the work of the entire team
- Reports to his/her hierarchy to improve the operation of his/her points of sale
- Management of payments at points of sale
- Guarantor of proper cash register closing
- Supervises services and teams
- Mastery of table-side carving (according to BEEFBAR standard)
- Taking reservations
- Creates a relationship with the clientele and offers a privileged moment to clients
- Personalizes service to meet client expectations and takes orders
- Order taking
Job Purpose:
- Having in-depth knowledge of service techniques
- Having successful experiences in bistronomic or even gastronomic dining

- Practicing several foreign languages including English • Proven experience in a similar position within a high-end or luxury establishment.

- Excellent communication and information transmission skills.
- Ability to develop sales and contribute to the performance of the point of sale.
- Mastery of reservation tools (Seven Rooms would be a plus), payment systems, and software related to restaurant activity.
- Fluent English is essential; practice of a second language is appreciated.
