Captain of Waiters - Fine Dining Exp.

We are looking for a leader passionate about hospitality and excellence in gastronomy, capable of turning every service into an extraordinary experience. A person with sensitivity to detail, executive presence, deep knowledge of Set Menu service, and the ability to lead teams that operate with precision, elegance, and warmth.

Responsibilities

• Lead the entire service operation of the restaurant.
• Guarantee an exceptional experience for every diner throughout their gastronomic journey.
• Ensure the correct execution of tasting menus, pairings, and special experiences.
• Coordinate the perfect synchronization between kitchen, sommelleries, and dining room.
• Manage VIP reservations, private events, and attention to high-profile clients.
• Monitor indicators of satisfaction, reputation, and service quality.
• Design continuous training programs focused on hospitality, protocol, etiquette, and suggestive selling.
• Manage operating budgets, productivity, and costs related to the service area.
• Resolve incidents and lead service recovery processes.
• Promote a culture based on excellence, attention to detail, and continuous improvement.

Requirements

• Bachelor's degree in Administration, Hospitality, Tourism, Gastronomy, or related field.
• Desirable certifications in luxury hospitality, wines, or restaurant management.
• Advanced English is indispensable.

Experience

• At least 5 years in service directorial or managerial positions.
• Verifiable experience in Fine Dining restaurants, gastronomic, signature, or tasting menu establishments.
• Desirable experience in restaurants recognized by Michelin, Worlds 50 Best, or luxury gastronomic concepts.
• Solid knowledge of wines, pairings, and service protocol.
• Experience interacting directly with executive chefs and chef-owners.
• Ability to anticipate customer needs before they are expressed.
• Obsession with operational excellence and diner satisfaction.
