The Chief Cook is responsible for managing the kitchen operations, preparing high-quality meals, supervising kitchen staff, maintaining food hygiene and safety standards, and ensuring efficient food production according to the required menu and standards.
Key Responsibilities
- Plan and prepare daily meals according to the menu and required standards.
- Supervise and coordinate kitchen staff, including cooks and kitchen assistants.
- Assign daily duties and monitor staff performance.
- Ensure food is prepared with good taste, quality, presentation, and consistency.
- Check the quality and freshness of ingredients before use.
- Manage food inventory, storage, and stock levels.
- Monitor food costs and minimise wastage.
- Maintain proper portion control and follow standard recipes.
- Ensure the kitchen, equipment, utensils, and work areas are clean and hygienic.
- Follow food safety, hygiene, and workplace safety regulations.
- Ensure proper storage and temperature control of food items.
- Coordinate with management regarding menus, special meal requirements, and kitchen operations.
- Train and guide junior kitchen staff in cooking methods, hygiene, and safe food handling.
- Monitor kitchen equipment and report any faults or maintenance requirements.
- Maintain proper records of food stock, wastage, and kitchen activities.
- Ensure meals are prepared and served on time.
- Handle customer or management feedback regarding food quality and make improvements where necessary.
Requirements
- Relevant experience as a Chief Cook, Head Cook, or Senior Cook.
- Good knowledge of food preparation and cooking techniques.
- Ability to manage and supervise kitchen staff.
- Knowledge of food hygiene and safety practices.
- Ability to work under pressure and meet meal preparation deadlines.
- Good communication and teamwork skills.
- Physically fit and able to work in a busy kitchen environment.
